1. Cleaves an avocado in two
Scientifically proven: 3 times the sharpness
Comparison testing of the KANZEN Knife against mid-priced knives showed roughly 3 times the sharpness — and it proved sharper even than knives in its own price range.

In addition, after about six months of cooking use, the knife was found to retain sharpness equivalent to a brand-new mid-priced knife.
Its high level of sharpness is proven to last.
*DCC method: a test that strokes a knife across test paper under fixed conditions and measures the cutting distance per stroke. A larger value indicates a sharper edge.

2. Proven by a research institute
A knife that makes food taste better
Using the taste sensor “Leo,” developed by Keio University and OISSY Inc., we scientifically analyzed how knives change the taste of food — and the results were astonishing.

A change in taste that over 95% of people notice
When a tomato was cut using two knives, a KANZEN Knife and a mid-priced stainless steel knife, and the changes in taste were analyzed, it was proven that the KANZEN Knife produced a significant difference in taste, with 95% of people noticing the umami and over 75% noticing the sweetness and richness.

Why does food taste better?
The reason lies in the shape of the blade. The KANZEN Knife's edge is polished sharp and smooth to approximately 0.001 mm.
Most knives are machine-polished, but the KANZEN Knife is carefully polished one by one by bladesmiths of Seki City, Gifu Prefecture — heirs to 800 years of blade-making.
As a result, it cuts cleanly without damaging the fibers of the food, transforming how the food tastes.

3. For safe, confident use at home
Care is just wash and wipe
Sharp, expensive carbon-steel knives require special care, but the KANZEN Knife is made of premium, highly rust-resistant stainless steel — so just like an ordinary household knife, simply washing and promptly wiping it dry prevents rust and preserves the edge.

How is it possible to achieve both high sharpness and easy maintenance?
The KANZEN Knife achieves its high performance through “honyaki-style” construction, using the super stainless steel “VG-10” for 100% of the blade.
In ordinary knives, VG-10 super stainless steel typically makes up only about 10–20% of the blade as the core material, sandwiched between softer stainless steel on both sides.
The KANZEN Knife instead applies honyaki-style construction with super stainless steel throughout — making it possible to use the highest-quality stainless steel for 100% of the blade. This is how the KANZEN Knife was realized.

FAQ
Frequently asked questions
Instead of physical stores, we offer a 7-day trial period so you can try the KANZEN Knife at home.
The blade is 100% VG-10, a super stainless steel also called ultra-hard alloy steel.
This steel is normally used only in parts such as the edge, but by independently developing a manufacturing process specialized for super stainless, the KANZEN Knife uses it for 100% of the blade.
The handle uses black laminated wood, prized for durability and stability.
Yes, you can use it without any problem. The KANZEN Knife has a double-bevel edge, so it delivers the same sharpness regardless of which hand you use.
The standard size is 340mm overall, with a 203mm blade, weighing 163g — sized to cut virtually any ingredient with ease, and slightly lighter than a typical knife.
Like-new sharpness varies with frequency of use and ingredients, but with typical home use (once or twice a day), expect about 1–2 months.
Sharpness ample for everyday cooking should last about a year or more.
No, it cannot be used.
The high heat and water jets can cause the handle to whiten and the blade to deteriorate.
* Problems caused by dishwasher use are not covered by the warranty or eligible for return.
Yes, off-the-shelf whetstones work fine.
That said, the KANZEN Whetstone is a dedicated stone carefully designed for the steel and hardness of the KANZEN Knife. Store-bought stones will sharpen it adequately, but the KANZEN Whetstone offers smoother sharpening and helps the edge last longer. For those planning a long life together with their knife, it’s well worth trying.
Depending on what you cut, the blade may chip — this is part of the product's specifications.
Frozen foods, hard seeds and pits, and bones are the main causes of chipping.
Chips caused by these foods are repaired for a fee.
Rust can occur by the nature of stainless steel and is not an initial defect.
Washing off grime after use and always wiping the blade dry before storing makes rust far less likely.
After use, wash well, wipe off moisture thoroughly with a towel, and let it dry.
Leaving it unattended for more than 3 hours after use can cause rust.
If rust does appear, use a coarse sponge or a dedicated rust-removal sponge.
