Customer Reviews
Translated from Japanese
Outstanding sharpness, and the weight and balance make it easy to hold.
My hands are small, so the petty knife suits me well. Shredding and thin-slicing vegetables, hard things like kabocha and winter melon, bread, chicken, and so on. Shredding and thin-slicing vegetables, and hard items like kabocha and winter melon.
This was my first petty knife, and it turned out to be far more versatile than I ever imagined — incredibly handy. It's now my main knife, and I only occasionally reach for the regular size. If you're on the fence, I wholeheartedly recommend it.
At first the grip felt fixed (the shape decides where your fingers go), and it hurt when I tried to cut — but after a few uses, the sharpness of the edge means my shoulders stay relaxed and it just glides through, so it's easy, and the edge is so incredibly keen I wanted to keep cutting more. 🍎 The very first time, peeling an apple, the handle pressed painfully — 'does this just not suit me??!!' I nearly crumpled — but I realized it hurt because this petty asks for a different way of applying force than my old knife. Wilted ginger with its tough skin used to take real force and feel dangerous to cut, yet this petty slides right through!! Amazing! Every time I use it, I notice something new — the difference in sharpness and more!!
The sharpness — vegetables in particular seem to taste better.

With daily care, the edge just keeps getting better.
The standard size is on the big side, so I use the petty knife for smaller cooking tasks.
I mostly cut fruit — we eat a lot of it. No complaints with the petty, but the regular size hits the tip in storage, so I wish it were shorter.
I meant it as a backup knife, but it cuts so well it's now my main knife for everything. Mostly vegetables, I suppose. Living alone, the standard size was too big to handle, so I gave it to my parents who cook for three or four. This size is just right for making a single serving of simple meals.
Sharp and nimble. Hulling strawberries, decorative cuts on shiitake.

The standard size is too long for a woman's hand to use comfortably, so this one is my main knife.
I use it for prep like trimming chicken thighs and cutting smaller vegetables.
A sharpness like nothing I've experienced. A very practical size.
I use it for fruit, prep work, and condiments. It cuts so well that I keep an eye on my fingers.
My hands are small, so the petty knife is easier for me — for any small task I reach for this one without thinking. I bought the set, but this is the one I use most.

I cut with the petty a lot; a size between the petty and the regular knife would make it even more convenient.
Clean cut faces — even when I want thin slices of tomato or fruit, the flesh doesn't get crushed.
I bought it as a gift, and they say it's become pretty much their main knife.
I use it as my main knife, from vegetables to meat.
I use it a lot for cutting fruit. My hands are on the small side, so it's very manageable.

I use it for fruit — easy to cut with, and the fruit doesn't get crushed.
Bento prep. Peeling and cutting fruit and vegetables.
Sharp. Perfect for times that don't warrant pulling out the standard size.
Great for prep like mincing garlic and ginger.

Fruit, condiments, simple cooking, breakfast prep — it's my main knife. The tip felt scarily sharp at first, but it's easy to use.
Handy for cutting fruit and other small things!
Daikon, tomatoes — pull it out, slice through smoothly, put it away. Effortless.
As a petty it works as my main knife — cuts well and is handy for prep.
Fruit. I cut apples a lot. Almost too sharp.

For cutting fruit, it's light and allows nimble, precise handling.
Great for detailed work like decorative fruit cuts and peeling potatoes.
It truly slices clean — feels wonderful. I eat fruit every morning and use it then. It also cuts boiled eggs for bento beautifully.
I use it for prep, fruit, and condiments — it cuts really well.
Very easy to cut with. Even chicken slides right apart.

It's my wife who uses it, not me — beyond the sharpness, she's delighted with how easy it makes shredding vegetables during prep.
I suspect you can't really appreciate the true quality without using the full-size knife.
I mostly cut vegetables and the performance is excellent. Hoping this feel lasts a long time.
Easy to hold. The usability fits perfectly with wanting to use it for life.
For cooking single portions, the petty alone is plenty. Splitting large vegetables or fruit is a stretch, but for small amounts it's light and sharp — indispensable. The thin, flexible blade even works for filleting fish. Nice blade flex, and the curve from heel to handle is comfortable with little strain.

I use it occasionally for bento sausages and fruit. The sharpness itself is superb. But the blade has so much curve that unless you draw it properly through the cut, thin skins on things like sausages stay uncut. The grip feels good, yet because you have to mind how you move the blade to get clean cuts, I've ended up using it less. Compared with my previous petty, the distance from the handle to the heel corner feels long, and peeling an apple in my hand felt slightly off. Perhaps it's just a matter of getting used to it.
Easy to hold and use. I mainly cut fruit. At first it was so sharp it was almost scary to use, but after about a month it has started to dull.
I cut fruit and tamagoyaki — I use it for small things. It's a bit small for peeling apples and pears. I'd hoped this could be my one fruit knife, so that's a shame. All my previous knives had slightly rounded tips; this one is extremely pointed and a little scary to handle.
I tried it for everyday cooking — it cuts, but it's awkward, so maybe it's for fruit and one-off uses? That said, the cutting feel is so good it changed what I cook.
It feels too small — I'd like a bit more solidity.

Small and easy to use, good for fine cuts. It cuts so well there's no stress — a joy.
Condiments, fruit, cheese — mostly used at the table. The current size is easy to use, but I'd also like one a size smaller.
I like small knives, so apart from large fish and meat I use the KANZEN petty for almost everything.
I use it for fruit, prepping small vegetables, and desserts.
Even slippery ingredients like green onions shred effortlessly, and being small it's easy to wash. Frozen garlic, still hard after a moment at room temperature, takes the blade smoothly — saving me a step or two. Shiso, which tends to stick together, shreds with zero stress. Love it!

I use it for prep like removing stems. A slightly slimmer blade would suit me even better.
The sharpness is superb — I use it on soft foods like tomatoes and bread.
I often use it for condiments, cheese, and fruit. Very satisfied with the handy size and outstanding sharpness.
The size, sharpness, and weight are all just right.

I like how well it cuts, the easy-to-handle design, and the grip.
With kids, I often use it to cut finished dishes into small pieces. The sharpness is simply excellent.

I prefer straight blades and handles, so this blade shape feels awkward to me.
I use it for prep, decorative cuts, condiments, carrots, green onions, burdock, and so on.
I use it carefully for cutting small amounts of anything other than meat. A happy problem, but it's so sharp I can't handle it casually.
Katsuramuki on daikon, and eggplant and tomato slice right through. It's so sharp I have to be careful when washing it.

The nimbleness is great — good for cutting condiments on a small board. It felt a bit heavy.
I use it as my main knife. This size feels just right for a woman's hand. It's so sharp that early on I cut my finger on the tip a few times — a slightly rounded tip might be nice. Care also feels a bit scary because of how keen it is.
It cut well at first. I could use it as my main knife.

The standard size is biggish, so the petty is handy for quick jobs and small fruit. It cuts well.
It's my main knife for vegetables, fruit, and sliced meat. I'd like a bit more blade length — this feels like fruit-knife size.
Exactly as the name says — flawless! I bought it as a set with the standard size. Even kabocha cuts cleanly and effortlessly, almost pleasurably. I did find myself wishing the handle came in a natural wood grain rather than black.
Meat and hard vegetables cut with ease. The sharpness is in a different league.
No stress when cutting, and the balance in hand is excellent.

1. Cleaves an avocado in two
Scientifically proven 3x sharper
When the sharpness of the KANZEN Knife was compared with that of other companies' products, it was found that the sharpness was about three times sharper, and that it was even sharper than other companies' knives in the same price range.

In addition, when each knife was used for cooking for about six months, it was found that it maintained the same sharpness as a new knife from another manufacturer.
It has been proven that the sharpness lasts for a long time.

2. Proven by a research institute
A knife that makes food taste better
Using the taste sensor Leo, developed by Keio University and AISSY Inc., a scientific analysis was conducted to determine how the taste of food changes depending on the knife used. As a result, a surprising fact was discovered.

A change in taste that over 95% of people notice
When a tomato was cut using two knives, a KANZEN Knife and a mid-priced stainless steel knife, and the changes in taste were analyzed, it was proven that the KANZEN Knife produced a significant difference in taste, with 95% of people noticing the umami and over 75% noticing the sweetness and richness.

What makes ingredients taste better?
The reason lies in the shape of the blade. The KANZEN Knife's edge is polished sharp and smooth to approximately 0.001 mm.
Most knives are machine-polished, but the KANZEN Knife is carefully polished one by one by bladesmiths of Seki City, Gifu Prefecture — heirs to 800 years of blade-making.
As a result, it cuts cleanly without damaging the fibers of the food, transforming how the food tastes.

3. For safe, confident use at home
Care is as simple as wash and wipe
Sharp, expensive carbon-steel knives require special care, but the KANZEN Knife is made of premium, highly rust-resistant stainless steel — so just like an ordinary household knife, simply washing and promptly wiping it dry prevents rust and preserves the edge.

How is it possible to achieve both high sharpness and easy maintenance?
The KANZEN Knife achieves its high performance through “honyaki-style” construction, using the super stainless steel “VG-10” for 100% of the blade.
In ordinary knives, VG-10 super stainless steel typically makes up only about 10–20% of the blade as the core material, sandwiched between softer stainless steel on both sides.
The KANZEN Knife instead applies honyaki-style construction with super stainless steel throughout — making it possible to use the highest-quality stainless steel for 100% of the blade. This is how the KANZEN Knife was realized.
