The KANZEN Cutting Board blends natural wood powder into fine rubber processed in Japan, achieving the “blissful blade feel” that is gentlest on a knife's edge.

Sharpness like new,
even after 500 cuts

Using the taste sensor “Leo,” jointly developed by Keio University and OISSY Inc., the same knife was used for 500 cuts on cutting boards of different materials, measuring changes in sharpness and in the taste of the food.

The results showed zero difference in taste between a brand-new knife and a knife used 500 times on the KANZEN Cutting Board.

In other words, it was proven that even after 500 uses, the knife's sharpness remains equivalent to new.

In cutting tests on the KANZEN Cutting Board — tens of thousands of cuts over more than 10 hours — the cut depth was only about 0.5 mm.

Compared with about 1.5 mm on a wooden cutting board, it succeeded in limiting damage to just 1/3. *1

Limits moisture absorption to 1/16, preventing bacterial growth

In addition, cutting boards often absorb moisture from meat and fish, which frequently leads to bacterial growth and mold.

Water-absorption testing of the KANZEN Cutting Board, by contrast, proved that it limits moisture absorption to 1/16 that of a wooden cutting board. *2

Kitchen bleach and hot-water sanitizing OK

In addition, kitchen bleach (such as Haiter), which is difficult to use on wooden cutting boards, can be used on this board.

Hot-water sanitizing is also possible, using water below 90°C as a guideline.
